The Intro

Kimbell Brewing is named after Martin Kimbell, one of Logan Square's original settlers. Matt Kanable and I have been brewing near the former location of his farm at Milwaukee & Kimball since January 2009. Drawing on inspiration from the early settler & his farming life, we have spent much of the past year focusing on rustic Farmhouse style ales. Although many facets of the Farmhouse style have been explored, Kimbell Brewing plans to brew anything our whim dictates. In the past year alone we have brewed such styles as craft beer mainstays Imperial Stouts & IPAs; older forgotten styles like Gose & Kentucky Common; classic styles like Roggenbier & Lambic; as well as experiments such as our Porter steeped with fresh ground coffee and SCOBY-fermented apple cider.

Moving forward, while home brewing, we're incubating our recipe's & techniques and learning the business with hopes that Kimbell Brewing one day joins the ranks of successful, innovative craft breweries in the United States.

We'll be making our public debut this Saturday at the Brew Ha Ha Ha in Bucktown, Chicago, pouring the following beers:


Nocturne
Coffee Porter

Out of the Woods
Oatmeal Stout aged in oak with bourbon

New Day
100% Brett Ale brewed with orange peel & coriander

Farmhouse 006
Wheat Ale brewed with mixed yeast culture

Ghost
Ale brewed with pumpkin, rye & spelt, fermented with wild yeast
